Eats for Saturday 2/26/11

Today was my first day off in a week and I took full advantage of it. I slept in until noon and it was wonderful. I was all snuggly in my warm fuzzy blankets, dreaming of zombies and rebuilding society.

I'm reading the graphic novels, The Walking Dead.

It affects me.

When I finally got out of bed (after much prodding from MB), I chilled for a bit. I caught up on my dvr shows from the week. Then, I showered and cleaned the house and started laundry.

I'm also off tomorrow and MB will be gone, working a 24 hour shift. This means I get to sleep in as long as I want and be as lazy as I want and he can't give me any crap.

Although, I plan to go walking with the pup if it's nice out. We need some fresh air. Especially her. She stinks.

Note to self: Call the groomer!

I made one of my favorite soups today. Spinach Rice Soup. It's super easy to make and it is delicious.

This is all you need...


One cup of risotto rice, 1 small chopped onion, 2 cloves minced garlic, crushed red pepper, 5 cups chicken broth and lots of this...

...fresh spinach.

Yummy.

For dinner, MB and I shared some chorizo mushroom risotto. It was also yummy. We both had a sweet tooth and ended up getting some ice cream. I know. Fat Club fail.

It was such a busy day in the crisis unit today that I didn't get a chance to eat lunch. I ended up snacking on stuff in between patients. By the time I left, I was starving. MB and I went out to eat.
I could've made different choices for dinner. However, I managed to stay in my points range and my meal was delicious.
Sometimes I have days like that at work. You barely get time to breathe, let alone time to sit and eat the yummy cup of spinach soup you made the night before. That's life in the crisis unit.

Weigh in. Schmeigh in.

It was supposed to be weigh in day yesterday, but I missed it because I was out having fun. I was going to weigh in today, but I just haven't done it yet.

Honestly? I don't really feel like facing the scale this week. It's not that I think I gained. I actually think I'm down at least a pound. I just don't feel like weighing in.

It's weird how that happens some weeks. Things have been going well. My eating has been good this weekend, although I haven't had a chance to stop by and post my eats. My exercise was pretty good. I took advantage of the weather and walked three days last week. Then, it snowed and got super cold again. Boo.

So, I apologize if my not weighing in ruffles anyone's feathers. Yes, this is still my fat fighting blog. Yes, I'm still committed to releasing my inner skinny. Yes, I'm still struggling with all of that.

Moving on, my goals for the coming week are the same as they always are. I plan to stick to healthy meals and stay within my points. I plan to walk at least three days outside (weather permitting). I plan to do at least two days of Slim in 6. MB and I also plan to restart the Couch to 5K either this week or Monday. It depends on our schedules and when we can plan time to run together.

I'm feeling good about things and I know I will have a good week.
